Domaine Salvat
In the high valley of the Agly, the Fenouillèdes has perfect wine-growing soils. The Domain Salvat is perched at 400M altitude at Saint Martin de Fenouillet. It is worked today by John Philippe Salvat and his children. Several generations of the Salvat family have constructed this vineyard little by little, where Irénée, John Philippe’s father created the finest bottle of white Taïchac in 1963.
Today the vineyard is larger, the wine produced is well recognized and this wine-growing business benefits from another type of soil at the River Villeneuve, which has allowed them to cultivate vintage Cuvées
Try the first class white wine Taïchac for its freshness and the red wine Fenouil with its well rounded aroma of cherries. Connoisseurs of stronger wines will also enjoy the Cuvée Gineste 2004.

Charcuterie Bonzom
Bernard Bonzom understands the absolute necessity of maintaining the long tradition of Cerdane charcuterie and delicatessen. As head of his business, he perpetuates the knowledge of these products from the mountains. In order share the heritage, he has created a museum of Cerdane charcuterie where one can see its evolution over time. The visit includes the impressive séchoir, where the meat is cured and a gourmet snack in order to better appreciate the charcuterie. His new shop in the centre of the village also does tastings and will put together platters of charcuterie accompanied by regional vins du pays wines.
Domaine Rombeau
This is an establishment with a welcome, which radiates out beyond Rivesaltes. Housed in a cellar with remarkable architecture, the restaurant welcomes both small numbers of diners and larger parties. The host of the Domaine, Pierre Henri Delafabrègue welcomes you with his legendary good humour and is always ready to tell you the history of his vineyard. Catalan gastronomy with an aperitif of Muscat, is served with toasted country bread with ham, “cargolades” (roasted snails) and succulent meats grilled over the fire.
